I've resisted the urge to buy a spiralizer gadget, mostly because I pretty much have run out of room for any more kitchen tools, but on a trip to an outlet center, I found this tiny one, which I bought. I don't even want to admit how long it sat without being used, but when my cousin gifted me with several zucchini from her garden, I decided to break it out of its box. It worked great with the zucchini, creating long uniform zoodles. It probably would work with fat carrots, but it didn't work that well with thinner ones, so for the carrots, I used a julienne peeler. You could probably use your food processor shredder attachment.

This carrots and zucchini salad is a great side dish to any meal, it is easy to make and simply delicious! I love fresh raw carrots and carrot salads they have a nice sweetness, crunch and are so nutritious.  Carrots are rich in beta-carotene, which is converted into vitamin A in the liver. Vitamin A is necessary and helps improve vision. High levels of beta-carotene also act as an antioxidant to cell damage done to the body through regular metabolism and help slow down the aging of cells and promote healthier skin.

With zucchini now in season, I decided to experiment and added shaved zucchini to this salad, and it turned out amazing! This is a lovely side dish to grilledchicken, steak or fish. sing really good extra virgin olive oil will give you the best results. It takes only about 10 minutes to make.

1 pound carrots, peeled and grated1 zucchini, grated cup Country View Dairy Farm plain yogurt cup mayonnaise3 tablespoons Great River pure maple syrup1 teaspoon fresh ginger, grated½ cup sunflower seeds

This salad has a nice little crunch from the raw crunchy vegetables and the toasted sesame seeds. I absolutely love spiralized zucchini, carrots, and squash. Spiralizing vegetables is a great way to eat more raw veggies. By eating vegetables raw, you get all the nutritional value out of vegetables, plus it saves you cooking time.

In most recipes, spiralized and julienned vegetables can be used interchangeably unless you're cooking an authentic French dinner for French people, in which case you might want to stick to the julienne technique.  

Spiralizing vegetables gives them a great crunchy texture and is a fun way to eat more raw vegetables. I mean, think about it: you probably wouldn't eat sliced raw zucchini. But spiralized raw zucchini? Yum!
