Ernest Hemingway, born in the last year of the 19th century, seemed to embody the kind of gruff masculinity that John Wayne wouldve looked up to. In pictures, he looks like he wore sweaters made of brillo pads. He participated in three wars. He had strong opinions about all kinds of thingsguns, fine art, boxing, European citiesand was always up at dawn, claiming to have seen every sunrise since hed been born. He was never happier than when hunting or fishing, really anything murderous. He survived two plane crashes in two consecutive days and after the second was believed dead, until he emerged from the jungle holding a bunch of bananas and a bottle of gin, Time magazine would report later, battered but unbowed.
This is the origin story of what we now know as the Hemingway Daiquiri. The flavors here are fantasticthe bitter zesty texture of grapefruit is a natural friend to Maraschinos earthy funk, and rum and lime juice are so perfectly aligned that they buy each other the same Christmas presentsbut the ratios are another story.
My favorite version. Yes, its a lot of Maraschino liqueur, but personally, I feel like this is the version that stakes the boldest claim, and that when I start craving a Hemingway Daiquiri, this is what most thoroughly scratches that itch. The lime juice is in a small range, above, because of the inherent variation present in grapefruitsthe sweeter the grapefruit, the more lime youll need. Start with a half-ounce of lime. You can always add more.

This week we came across some deliciously ripe grapefruits in Asheville. We wanted to create some cocktails that would allow the flavor to come through as much as possible. We made a few different cocktails, but our favorite was this Grapefruit Daiquiri, with a little bit of agave syrup to give it some depth. Using a white rum is perfect for cocktails where you want a specific flavor to show through but also want to taste a little of the base. To helpmake sure the grapefruit wasnt too overpowering, we also added in a little bit of lime juice. With all these ingredients coming together, we found a great balance and delicious variation on the classic Daiquiri.
Although it is typically less used than orange wedge, grapefruit offers a similarly fun and showy wedge that is worth a consideration when working with grapefruit cocktails. We use it as a substitute for a grapefruit twist in the excellent soul clench cocktail from Death Co.
I think I may have just discovered my favorite drink of the 2022 holiday season. This spiced grapefruit and rum cocktail was inspired from one that I had recently at a tiki bar. Which, if you have not yet been to a tiki bar you have got to give it a try! Theres a great one in Chicago called Three Dots and a Dash that serves one of their cocktails with a banana cut to look like a dolphin. Its adorable. Anyways, these cocktails may not have banana dolphins, but they do have a secret ingredient that makes them perfect for drinking during the holidays.

While some might thing the citrus makes this feel like a Summer drink, I would have to disagree. Grapefruit is just tart enough, and not as bright and citrus-y as oranges and lemons, to make it more of an all year around fruit.

One such variation is the Jacq La Ginger. Adapted from The Bluffton Room at Hilton Head Island in Bluffton, South Carolina, the drink is named for the famed female pirate of the Caribbean, Jacquotte Delahaye. Thought to have been born in Saint-Domingue in 1630 to a French father and Haitian mother, she was known for her fiery red hair, for which the drink is partially a pun onthe Ginger in Jacq La Ginger refers to both it and the ginger beer in the drink.
