Cucumbers are probably one of my favourite vegetables to eat raw. There is something so refreshing about the taste and texture of them. But when you season them with soy sauce, sesame oil, chili oil and sugar it is cucumber heaven! The slight kick from the chili oil and the salty sweet umami flavour from the soy sauce with the nuttiness from the sesame oil really make this Chinese spicy cucumber salad a winner!
This spicy cucumber saladrecipe is popular way to eat cucumbers in China and there are many different variations of it from garlicky to sweet. But I want to make mine spicy since I had a lot of homemade Sichuan chili oil left that I needed to use up. You can of course use store bought chili oil if you have it! Can i use store bought chili oil?
Japanese cucumbers can be quite thick, especially ones that I find at the farmers market. Because of the thickness, they can be difficult to smack whole with a knife. Thats why I recommend slicing the cucumber in half lengthwise.
Rice vinegar If you were wondering, rice vinegar and rice wine vinegar are the same things. Rice vinegar is mellow and slightly sweet. The best alternatives are apple cider vinegar and white wine vinegar.
Maple syrup It's best to use a liquid sweetener to get a smooth dressing. Maple syrup is my go-to for peanut dressing, but date paste or brown rice syrup are both worthy whole-food, plant-based options.
If you don't have red chili flakes but still want a spicy peanut dressing, use ancho chili flakes. If you use a ground chili such as cayenne, use a teaspoon and toss it into the spice mix after chopping the cilantro and peanuts. You can also use chili paste such as sriracha, but you will want to mix that into the dressing.
NoteSichuan peppercorns are the dried red-brown berries from an ash tree and are known to have a slight mouth-numbing effect. They are available from selected delis and Asian food shops. â€¢Â Chilli oil sauce, from Asian food shops, consists of chilli flakes, chilli oil and spices. Substitute 2 tsp chilli flakes in 1 tbsp chilli oil.
This recipe is perfect to make with the European cucumbers which are never bitter, and the recipe calls for the cucumbers to be salted and allowed to sit for 30 minutes to release water before theyre combined with the spicy dressing. Ive made this quite a few times skipping that step, so feel free to do that if it seems too fussy for you. But if you like spicy Asian flavors,you have to try this recipe!
