I really wanted to have something a bit special and different for supper one night this week, so ended up driving out to Sunnyfields Organic Farm to see what they had on offer and to have a look at all their local produce as well all I can say is wow the food looked so good that I could have spent a small fortune!

Luckily I had all the ingredients in the fridge or cupboards, so didnt need to pop out again for anything else. Cooking the meat and the sauce was as easy as the recipe suggested and the proof was in the eating it tasted fantastic. I served it all up with an assortment of the vegetables, roasting the sweet pototoes in the oven I even ended up making my carrots looking fancy too!

RACK OF VENISON Pre-heat oven to 200 degrees Heat a tablespoon of oil in an oven-proof frying pan. Add the rack and fry on all sides until golden brown all over. Sæson med salt og peber. Have you ever cooked with red currants before? I had never even tried them. Mr. Swiss Paleo picked them up at the store not knowing what they were, but eager to try them out. They are super sour, so I wouldnt probably suggest just eating them like other berries, but I do think you could make a deliciously tart jelly from them or add them into muffins or scones. See how easily my mind wanders to treats and baked goods?

Pour the Madeira into a saucepan and boil rapidly until reduced by half. Then add the beef stock and redcurrant jelly and stir until the jelly has dissolved. Simmer until thickened slightly and then put to one side.

Take the potatoes, peel them and cut into chunks. Cook the potatoes in salty water until tender and then mash them. Heat the milk and the cream and add half of the melted butter. Add them to the potatoes until you have a good consistency. Add the mustard to taste.

Season the venison steaks with salt and pepper. Heat the oil and butter to a medium heat. As there is very little fat on these, they cook quite quickly. Depending on how you like your meat, cook according to the timeshere.

When they are cooked, transfer to some tin foil to rest and turn the temperature down on the pan. Add the wine, redcurrant jelly, honey and bay leaf to the pan and bring to the boil. Simmer this until the volume has reduced by half and the sauce has a sweet and sticky consistancy. This should take about the same amount of time as the meat needs to rest.

I served this with some carrots purreed with 1 tsp of butter and some mash direct potato cakes and it was a delicious and indulgent dinner which went down very nicely with my lovely boyfriend as well.

These mash direct potato cakes are delicious and really reasonably propointed. You get one for 3pp and two for 7pp. I had the extra propoints to use so I had two of them, but they are a good size and one would be enough on most occasions.
