The Sally Lunn is shrouded in myth, claiming its origins from the Sally Lunns eating house, in Bath, and being very similar to our Yorkshire fruited teacake. Another theory is its anglicisation of soleil et lune French for sun and moon representing the golden crust and white base/interior.

Teacakes were something we all grew-up with in Keighley, often homemade and made on the big Monday marathon bake day by mum. I also remember as a child riding my bike to the local bakers shops, Lywoods on the corner of Florist Street or Fairleys on Aireworth Road, and being handed to me in a paper bag plain teacakes for our dinner which mum had paid for in advance eaten either with jam or potted meat during the long school holiday to push us on till teatime.

Looking back, toasted teacakes were a staple of our towns cafes, market, swimming pool and workplaces. I fondly remember dad toasting them over a coal fire with a long brass toasting fork for Sunday tea, oozing in melted butter throughout the long winter months as a snack after our big Sunday roast dinner do we still sit down as a family for a Sunday dinner disse dage?

The word teacake refers to the popular beverage, tea, which we do drink gallons of in Yorkshire being a good accompaniment for each other, but regional variances of Yorkshire refer to teacakes as bread buns, baps, buns, rolls or barms. We should always call them by the proper name teacakes so dont let anyone fob you off saying differently.

From that point forward, the service was indifferent and rushed. I decided to try the famous special, which I deciphered from menu-speak to include some sort of bread bowl. What arrived was basically a hunk of bread with some meat on it just swimming in gravy. For what it was, it was expensive, bland and disappointing.

We've spied our famous Lemon Buns being emulated in Marks Spencer, heard James Martin mention them on many a TV show, and even seen a recipe for them in Paul Hollywood's cookbook! But ours are the only original Whitby Lemon Buns, and we've been making in Whitby for over 100 years.

You will receive a box of four buns, sealed for freshness, and two pots of lemony icing. We carefully pack your Lemon Buns for their travels and they are best enjoyed on the day of delivery. The buns are suitable for freezing.

Growing up in New Zealand buying a Sally Lunn from the bakery was such a treat for our family. I decided to add my own spin on it and create a hot cross bun style loaf then top it with a delicious white icing and desiccated coconut. This soft and light loaf is perfect spread with butter and served with a pot of tea.

The Sally Lunn is also know as a Boston bun - sometimes it is made with leftover mashed potato, I just used a traditional hot cross bun dough for mine. I am so happy with the way this recipe turned out, I love it when a recipe vision comes to life.

Warm the milk in a small jug in the microwave - mine took about 40 seconds. Stir in the yeast and one teaspoon of brown sugar. Set aside for 10 minutes or until bubbles appear. While the yeast is working it's magic place 2. cups of the flour, brown sugar, cinnamon and mixed spice into the bowl of a mixer and stir together. Then pour in the yeast mixture, melted butter and egg.

Using the dough hook start the mixer on low to mix everything together and scrape down the sides of the bowl if needed. Then turn on to a medium speed and slowly pour in the remaining cup of flour. Mix for 5 minutes until a smooth dough forms and it is easily coming away from the sides of the bowl.  Add the dried fruit and mix on low until it is all incorporated.  

Bake for 35 minutes or until golden and cooked through. Remove from the oven and let it cool on a wire rack. To make the icing: Use the whisk attachment to beat together the butter, icing sugar and milk until smooth and thick. Spread over the loaf then carefully sprinkle over the coconut.

The Boston Bun, a non-yeast raised dried fruit and spice studded quick bread, has a wonderful moist texture due to the inclusion of left-over, cold mashed potato. Iced thickly it is also known as a Sally Lunn.
