NOTE: It is necessary to start with cool water as opposed to warm or hot, as cornstarch does not dissolve as easily in warm or hot water as it does in cold. Så. se cool. It takes a little longer, but you will be happier with the final product in the long run! After everything is dissolved, you can turn up the heat a bit if you want to; just keep stirring to prevent scorching or burning!

As you cut your fruit, place it into a large mixing bowl. Gently toss to mix. Sprinkle pudding mix over fruit and then drizzle lime juice over top. Using your hands or a spatula, gently fold the mixture until all pudding mix has dissolved into fruit juices. Chill until ready to serve.

Beat together milk and pudding mix either by hand with a whisk or with an electric mixer on low for 2 minutes. Gently fold 1/2 of the whipped cream topping into the pudding mixture. Spread the mixture into the prepared pie crust. Sprinkle 1/2 of the toasted coconut over top of pie. Cover, and refrigerate for 2 hours. Spread the remaining whipped cream topping evenly over the pie and then sprinkle remaining toasted coconut on top. Keep refrigerated.

Hopefully I don't get kicked out of the group for fudging the rules a little bit since the crust has to be baked, but if your really looking for a no bake option I can turn my head the other way while you pick up a pre-made graham crack crust from the store.. You do what you have to do when the weather is hot!

This is yummy. Sort of a pie, sort of like a pudding. This reminds me of a dessert called chocolate lush. I made this for my hubby's birthday instead of a cake since he isn't a cake eater but loves cheesecake, pudding and parfaits. I used 2 milk and chocolate pudding mix since he doesn't like coconut either. This was really simple to prepare and just took a bit of time is all. Could be done with any flavor of pudding. This makes a huge pan and could serve 12 easily. Thanks for sharing this delightful dessert recipe.

Be sure to try this with the coconut cream pudding--it makes the recipe. This just isn't as good with banana cream pudding; and, although a chocoholic, I've never made it with the chocolate pudding. Pistachio--that I'll have to try!

I've been making this for years with butterscotch pudding. This year there is a new flavor Pumpkin Spice Pudding a limited edition flavor for the season by Jell-o. I would suggest stocking up on it for the year. It makes this dessert THE BEST EVER

We would make Coconut Cream Pie almost exactly like this at a bakery I used to work in. Pudding, whipped cream, and toasted coconut. We didnt have coconut flavored pudding in the bakery, but we would use coconut extract with the toasted coconut in a vanilla pudding.

I just made this pie and I had to run to the computer to post my review. This pie is fantastic! I had a craving for coconut cream pie after catching a little bit of a Gilligans Island re-run the other day. I remembered how easy this recipe seemed and grabed the ingredients at the store today. I used canned cocount milk instead of regular milk to kick up the cocount factor a little and it came out great! I will make this recipe all the time now! So easy and so tasty! Yummm

How easy can it get? This is great for those last minute summer cook-outs. My husband loves from scratch Coconut Cream Pie, and he said that this was right up there. Want even better pie? Melt 2 oz. semi-seet baker's chocolate, 1 tbsp. milk and 1 tbsp. butter in the microwave and pour in bottom of cooled pie crust before adding coconut mixture. Sprinkle top of pie with sliced almonds. nd YUM!

I made this last night. Yummy! Jeg tilføjede 1 pkg lite creme ost slået med bare en lille amt af mælk, og per andres forslag jeg brugte 1 sm pkg kokosnød creme pudding 1 sm pkg fransk vanille pudding med 1 1/2 kop mælk. Brugt 1 kop kokosnød i den pie ristede kokosnød sprinklet det oven på pisket topping. Sæt det i de 2 ekstra portioner størrelse Graham Cracker skorpe og alle elskede det! Jeg brugte sukkerfri pudding lite pisket topping ingen bemærket. Jeg vil helt sikkert lave denne pie igen.
