Yam and Pumpkin Curry  Original Flava

Of course, by the time I found this recipe, pie pumpkins were nowhere to be found, so I used a red kabocha squash instead. Red kabocha is a bit sweeter than pumpkin, but makes a delicious soup nonetheless.

This Jamaican Pumpkin Curry is one of my latest creations and the taste is mouthwatering, to say the least. I added creamy butter beansto my vegan pumpkin curry not only to increase the protein content of the curry but also for texture. In Jamaica, we love to cook with butter beans in our stews and soups. We tend to prefer the medium to large mature white butter beans versus green lima beans.

So I have been blessed with lots of pumpkins this year from my compost pile. ast year I threw pumpkin seeds in my compost pile and this spring I had the blessing of the pumpkin seeds germinating and blessing me with vines all over my garden.

I personally add coconut milk to 90 of my curry recipes, it is something I love to do. I grew up in a seaside town called Hopewell, in the parish Hanover in Jamaica and as a child tall coconut trees and groves were everywhere before many were destroyed in our area by the lethal yellowing disease.

Skin the chicken thighs, put them in a bowl and season them with salt and pepper. Put all the marinade ingredients into a small food processor and blend to a paste add a little water if needed.

Pour the marinade over the chicken and mix thoroughly to make sure the chicken is completely covered. Cover and leave for as long as you can at least a couple of hours, but overnight is better. If you are leaving the chicken for longer than an hour, put it in the fridge.

Add the pumpkin and cook for a further 10 minutes, covered. Pour in the lime juice and the rum, if using. Remove the lid and cook for another 510 minutes to reduce the sauce slightly and finish off cooking the pumpkin.

Jamaican Chicken Foot or Pumpkin Soup is a traditional Saturday soup which is cooked in most households. This is a quick one-pot meal which usually features pumpkins, carrots, yellow yam, Irish potatoes, cho cho and more. Country pepper is a term us Jamaicans use to refer to any type of really spicy pepper. Country peppers are usually chopped and eaten alongside the food as a condiment, but if the fresh stuff isnt available, then there must be the bottled kind. Scotch bonnets are often confused with habaneros, but they are different in both heat and flavor. While the resulting dish will still be peppery with this substitution, it isnt quite the same. The most famous country pepper is the scotch bonnet. A kind of chili that resembles the tam oshanter hat, the scotch bonnet rates anywhere from 100,000 to 350,000 Scoville units.

This Jamaican Pumpkin Soup makes me think of the Caribbean. hen we visited Jamaica, we got to eata delicious and authentic pumpkin soup. And the memory of it isprompted whenever it's pumpkin season here. That soup was velvety smooth, with the flavours of coconut, ginger, and nutmeg. In the Caribbean, pumpkins are oftencalled calabaza, or just winter squash. Calabaza, or tropical pumpkins, are a little different from our North American pumpkins, being green-skinned instead of orange. The flesh of the calabaza is perfectly orange, though, and the taste is very similar to both pumpkin and butternut squash.
