The 'perfect' fig preserves recipe?
Water bath processing is putting them right-side-up in a pot of water covering the lids by about two inches. Bring to a medium boil for about five to 10 minutes. You'll hear the lids pop; that means they're sealed. Turn the fire off and take them out and tighten the lids. Set them to cool overnight at room temperature. Test the lids by pushing on the center of the lid. If you can press it down and hear the pop that jar didn't process. That's okay, just put that one in the refrigerator and use it first.
Fig Preserves is the recipe to use if you want to keep the plump fruits whole. This is a traditional southern-style whole fruit preserves, not a spread like jam. ig Jam without added pectin directs you to chop the figs, and contains less sugar and less lemon juice than its crushed-fruit, pectin-added counterpart, Fig Jam with liquid pectin. If youre willing to mix fruit flavors, then you might like to try Strawberry-Fig Preserves, which uses gelatin to help obtain a gel.
Its well-known that peaches go naturally with bourbon, but what about an adult apple butter spiked with a jigger of applejack or rum? That could be fun. This is an easy way to take a reliable, tested recipe and give it a new kick.
pH, Acidity, Water Activity and Food SafetyMy food science buddy Al tells me you want canned fruit to have an acid pH of 4. or less to prevent anaerobic food poisoning bacteria from growing . Figs are not very acid and have a pH of 4. -5. . For this reason some recipes call for a teaspoon or so of lemon juice in each jar before canning to make sure the pH is low enough. However, my mother never added lemon juice, and we all survived. Another option is to pressure cook the figs as one would low acid vegetables, but who wants to do that! So my buddy Al tested some of my canned figs and said they are safe because the sugar content is high enough to decrease the "water activity" enough so that the pathenogic bacteria cannot grow. You should decide if you want to be extra safe and add lemon juice. Personally, I'll just stick to my mama's high sugar recipe. For more detail to make your decision go to Canning Foods At Home.

If the jars have not sealed after 12 hours, you can repeat the canning process. You'll know when the jars have suctioned by either hearing a loud snap! or seeing the indentation on the lid.
Fig season has already started in some parts of the country and its about to start in others. We were blessed with a giant fig tree when we moved to this house in the country and learning to cook with figs has been an absolute joy to me! Cinnamon fig jam has become one of my favorite things in the whole world!
Yes, Ill admit, before the move, my idea of a fig dish was the famous Fig Newton, but there is so much more to figs than that! They are a surprisingly versatile fruit! They are lovely roasted in the oven, they freeze and dehydrate well for later use, and theres my childrensfavorite way to enjoy them, as fig jam! They are highly perishable, so when you pick them or find them at the farmers market, you need to be prepared to use them quickly!
