Quincessential Quince and Apple ANZAC Biscuit Crumble

Method 1. Pre-heat oven to 200C. 2. Chop 6 small quinces into pieces, leaving the skin on 3. Squeeze 1 lemon and coat quinces in the juice 4. Melt 2 tbsp butter in the pan 5. Add 2 tbsp brown sugar 6. Add quinces to the pan with just enough water to cover 7. Bring to the boil, then cover with a cartouche made from baking paper 8. Lower heat to a simmer and cook for 40-50 minutes, until soft. Then place in a baking dish. 9. To make the crumble, add grated butter to the flour and mix with the tips of your fingers to create a breadcrumb consistency 10. Add oats, sugar, and ginger and mix in well, ensuring all dry ingredients are mixed in 11. Top cooked quinces liberally with the mix and bake in the oven for 30-40 minutes, until golden. Note: in case of juices overflowing, use a tray underneath 12. Serve with ice cream, double cream, or runny cream

Quince is best known in the format of quince jelly: an accompaniment to cheese and meat but it is largely a forgotten fruit. Which is a shame as its slightly tart flavour is great in puddings and desserts. Quince does take quite a long time to cook longer than apples which is why it is grated here and the oven temperature is slightly lower than it would be for a plain apple crumble and the cooking time is longer.

To make the quince pure, put the quinces into a large pan with 350ml water. Cover with a lid and simmer for 1 hr or until the quinces change colour and are pulpy. Remove from the heat and allow to cool slightly, then whizz with a stick blender until smooth. Pass the quince pure through a sieve into a clean pan and stir in the sugar, lemon zest and juice, and cinnamon. Cook the pure until it is reduced by one-third, then mix the cornflour with a little water and stir into the pure until its thick. Remove from the heat and allow to cool.

To assemble the tart, pour the quince pure into the tart shell so it comes just below the top, sprinkle over the crumble topping and cook for 25-30 mins or until the crumble is golden and the quince is bubbling around the edges. Serve warm with cream or custard if you like.

My daughter Kipper is a bit obsessed with quinces. I think there was one in an alphabet book once lets face it, theres not a great deal of choice when it comes to Q words. We even watched this video on YouTube to learn all about quinces and medlars. That probably helped with her enthusiasm. In any case, shes been keen to eat one for a while now.

So when I saw a box of them on the market alongside some lovely looking Bramley apples, I gave in and bought one. What kind of Mum would I be if I didnt indulge my daughters desire for unusual fruits once in a while?

This quince and apple pudding was fab though, and even DH agreed that the layer of crumble added something to the sponge. Kipper was predictably keen to get her teeth into the quince, and scoffed a generous portion. I even tried it out on an unsuspecting friend who said it was fabulous.

Poaching the quince in a heady mix of sweet spices saffron, cinnamon and star anise gives a delicate but definite Middle Eastern flavour. It is well complemented by the addition of pistachio in the crumble mix. We turned our crumble upside down so the topping became the base to allow the soft yellow-hued quince to shine in this lighter version of a classic winter comfort pudding.
