Made with a rich custard filling and juicy plums, this tart is a classic mix of sweet cream and sharp, fresh fruit. Get the recipe here...

Start by combining the flour, sugar and salt in a processor. Pulse a few times the add the butter pieces. Continue to pulse until it has a fine breadcrumb consistency. Add the egg yolk, vanilla and 3 tablespoons of ice-cold water. Pulse again until you have large clumps, adding a little more water at a time if necessary, until you do. Scoop the pastry into a ball and flatten it into a disc. Wrap it with cling film and refrigerate for at least 2 hours or preferably overnight.

For the dough: Combine the flour, sugar, 1 pinch of salt and the violets, make a well in the center, add the beaten egg and distribute the chopped butter around the edges. With your hands, quickly knead until smooth, form into a ball, cover withplastic wrap and chill for 30 minutes in the refrigerator.

On a lightly floured work surface, roll out the dough slightly larger than the tart pan and use to line the greased pan. Fill with the filling, top with plums, sprinkle with sugar and bake for 35-40 minutes. Remove the tart fromthe oven, let cool, sprinkle with violets and serve garnished with mint.

This is fantastic. Use Italian plums. hese are better for cooking and provide the tart to balance the sweetness of the custard. I, too, doubled the custard as recommended and it worked great--just needed extra baking time. Next time I would only use 3/4 cup sugar in the custard, though. A whole cup was too sweet. Great recipe!

Very nice dessert which could be adjusted for a lot of different fruits. I doubled the custard - i also topped with a little sugar at the end and popped under the broiler for two minutes to make a creme brlée type top. The cake underneath is more like a crust or a not-very-sweet cookie, but since the custard is sweet its ok. Made in a nine inch round pan since I don't have nine inch square - turned out fine just took a couple minutes longer to cook. Might consider a little cinnamon next time, or I like the idea a few people had of using almond extract instead of vanilla. I had to use half and half because thats what was in the house, but that worked fine.
