Healthy Oat Milk Pumpkin Latte

Press into a greased pan we prefer this 9-inch springform pan for easy slicing and serving, but a pie pan will also work. We like using our hands at first to evenly distribute the dough, then using a drinking glass to form it into an even layer.

This filling is seriously dreamy and seriously simple. Blend pumpkin pure, arrowroot, maple syrup, coconut sugar, pumpkin pie spice, and full-fat coconut milk in a food processor until creamy and smooth. Og voila! Pumpkin pie filling in seconds.

My favorite things about this pie are 1 its EASY to make, 2 the crust tastes like a cashew cookie granola bar and DOESNT fall apart, and the filling is perfectly sweet, creamy, and spiced! Serious swoon.

Embrace the chilly fall mornings with a stack of these delicious dairy free pumpkin pancakes. Theyre perfectly fluffy and full of tasty pumpkin spice flavor. A great cozy breakfast thats perfect for a weekend meal with the family!

Let the pancake batter rest for a few minutes while you preheat your griddle. Resting the batter allows the starches to swell, the gluten to relax a bit, and the leavening agent to start to work. The result is tender and fluffy pancakes!

When the griddle is hot, go ahead and pour the batter on. I use a ¼-cup measuring cup to make evenly sized medium pancakes, but you can do whatever floats your boat – big ol restaurant style pancakes or silver dollar pancakes or anything in between!

Yes use the same amount of homemade puree as you would canned puree.   Note that occasionally homemade purees can be a thinner texture; in this case you may need to slightly reduce the amount of liquid in the recipe.

Evaporated milk is a high-protein, creamy milk product used in many recipes. It is made by heating regular milk to remove about 60 of the water, creating a concentrated and slightly caramelized version of milk.

Sometimes making dairy-free swaps means compromising on the flavor or texture or some other element. To our delight, this recipe seems to be the exact opposite. Its even better when made with oat milk instead of dairy or evaporated milk! In fact, our friends and family who arent dairy free have said they now prefer pumpkin pie with this recipe!

PALEO PIE CRUST OPTIONSThe filling of this healthy pumpkin pie is 100 paleo. The oat-pecan crust isnt because of the oats. To make this pie paleo, simply use a paleo pie crust instead of the pecan oat crust. I love this paleo pie crust recipe.
