Rhubarb is colourful. There are numerous varieties of rhubarb ranging in colour from celery green to strawberry red. But take note, colour is not an indication of sweetness. Trust me, when I tasted these three varieties, they all tasted equally tart to me!

If youre a purist and you dont consume jam, syrup, muffins, crisps, bars, or fruit beverages then yes, you probably would find rhubarb of limited use. However, while our family is trying to cut back on sugar, we still eat those foods, and when we do, I want our choices to be good ones. As much as possible, we prefer food thats home grown, local and homemade so that we control the ingredients. Why not take advantage of the fact that rhubarb is local, cheap, and a source of fibre, vitamin C, Vitamin K and calcium.

And, of course all things in moderation. Im more likely to give my kids water or milk with their meal than rhubarb slush, but on those special occasions I would much rather serve a glass of rhubarb slush than koolaid or pop.

Were going to make the rhubarb jam BEFORE we make the dough. Hvorfor? It needs all the time it can to cool and then refrigerate which makes the consistency less runny. Super important so that you don't have a mess on your hands when rolling your Rhubarb Rolls!

1. Make the rhubarb jam. Add the chopped rhubarb, sugar, lemon juice and zest and cornflour into a small saucepan and bring to a simmer. Cook, stirring continuously for ten minutes. The rhubarb will break down, and the compote will thicken. You may need to use a fork to break up any larger pieces of rhubarb gently.

To check that the dough has been kneaded for long enough and the gluten has developed properly you can perform thewindow pane test. Stretch a small ball of dough between your index thumb on both hands and stretch it until you can see the light through the dough. If it tears, knead for another 2 to 5 minutes and try again.

Made with rhubarbon a farm high up in the Ligurian hinterland on the Italian Riviera. Spread on toasted Ciabatta or add to yoghurt breakfast bowls, use as a glaze after softening in a small saucepan over a lowheat with a little water to create a superb BBQ marinade for pork and mackerel or q glazing sauce for Asian-style dishes,BBQ sauces,desserts and cakes.

Note: Carrageen is a purple-brown or green fronded seaweed common on Scottish beaches on the mid-tide line. It can be used to set and delicately flavour a jelly or thicken a soup. If you gather your own fresh, you will need about 2 oz to set a pint of milk. Dried carrageen is available in health-food stores, or Chinese supermarkets in processed form, as agar-agar.

Alternate methods for determining jam stage: 1. The temperature test - mixture should reach 102C to 104C. 2. The plate test - use a cold plate from freezer. Pour a small amount of boiling mixture onto plate. Return to freezer; wait 1 min, then check for gelling. If gelling has not occurred return sample to kettle and continue to boil, testing every 2 min. Note: When using this test, remove kettle from heat. Makes about 3 L.

On a dry day, dehydrate at 135 F for 3 hours for parchment paper; it takes about a half hour longer for the fruit leather sheets. Keep in mind the humidity in the air can make a big difference! If you happen to be making these on a very humid day or during a rainstorm it takes 4 to 4 ½ hours for the fruit leather to dry on parchment paper. Longer still, if you prefer dry rather than gooey-chewy fruit leather.

Rhubarb contains pectin-type fiber and almost 90 water, which provides a jelly-like texture to the jam and helps to slowly absorb the added sugar. It is possible to indicate that there are different varieties of rhubarb, and among them we must choose the most succulent and visibly reddish for this preparation. Also take into account that there are varieties sweeter and other more bitter.

A native of China, rhubarb has been grownand traded for medicinal purposes since the 16th century. It became popular in cooking around the 19th century and is primarily cultivated in two ways: in a field or hothouse. Field grown rhubarb has the lovely dark red stalks and green leaves that we would get in Ireland at this time of year, while hothouse-grown rhubarb has pink stalks with slightly yellower leaves and a milder taste.

There are over 100 types of rhubarb but in Ireland, the most common varieties would beRhubarb Victoria, Timperley Early, and Glaskins Perpetual. RhubarbVictoria has been around since 1837, making it one of the oldest varieties available. It usually grows between May to August, whileTimperley Earl, one of the best varietiesfor both flavour and growing, reaches farmers markets around this time of year.

While Glaskins Perpetual rhubarb holds together well when cooking, it also doesn't have that tart taste you would usually equate with rhubarb. This mildness and its diversity as an ingredientmakes it a keen favourite with chefs.

Rhubarb is usually sold with the leaves are taken off and for good reason. While the stalks are safe to eat, the leaves contain poisonous oxalic acid and can cause illness even in the smallest amounts. When selecting rhubarb, for any dish, it should feel heavy with crisp, glossy skin - drier stalks will mean your end result will be lacking in flavour.

Rhubarb is a wonderfully a versatile ingredient - as the taste can be so tart, it perfectly balances out in sweeter dishes, but pork and offal can also pair with it quite nicely. One of the most popular ways to use it to make a quick and easy jam:

To check to see if the jamis ready, leave a saucer in the freezer, once the 10 minutes is up, place a blob of the jam on the plate and see if it sets. If it doesn't do not worry, reboil for an added 5 minutes.
