Tomato pure is made by lightly cooking tomatoes and then pureing the softened product into a liquid. Many consider tomato puree and tomato paste the same thing, but tomato puree is much thinner than later. Many curry recipes need tomatoes. And many times when we are making a curry, we have the option of using chopped or pured tomatoes. Now unless there is store bought tomato in the kitchen, we are more likely to use chopped tomatoes instead of going through the trouble of making a pure first.

When making a tomato based curry, there are times when tomatoes need to be cooked in oil for a while. For such cooking, unless the recipe calls for chopped tomatoes only, choosing a homemade tomato pure may be the right way to go. These are the reasons:

Chopped tomatoes tend to stick to the pan while cooking. To counter that, you end up using more oil. However, sticking to the pan is much less of a problem when tomato pure is used. It is obvious, when you use tomato pure for a curry, you will use a lesser amount of cooking oil.

Follow these simple steps to make fresh home made tomato puree which can be used in a variety of dishes.The tomato puree stays good for 1 or 2 days in the refrigerator. You can also freeze it to stay good for a month.

Made from crushed tomatoes and blended with tomato pure these bottled tomatoes have a finer texture than chopped tomatoes and a coarser texture than passata. They are available plain, with onion and garlic and with herbs.

One of the most popular condiments available, tomato ketchup can be found on caf and restaurant tables all over the world. It is made from a combination of tomatoes, vinegar, sugar and spices and is available in glass or plastic squeezy bottles.

Tomato pure is a concentrated smooth paste with a very strong tomato flavour. It is available in cans, tubes and jars. Organic tomato pure which is made from tomatoes grown on selected Italian farms is also sold.

Sun-dried tomato pure and sun dried tomato pure with oil, herbs and spices are also available, they have the rich taste of the dried tomatoes and are even more concentrated than regular pure due to the fact that the tomatoes are preserved in oil. You may wish to reduce the amount of oil in a recipe if you are using this type of pure.

Uses: Tomato pure adds a rich flavour and a very bright colour to sauces and soups, marinades, pizzas and risottos. It should be used very sparingly because the flavour is very intense and will overpower other ingredients if it's not used in moderation
