Blintzes, specifically cheese blintzes, are nearly synonymous with Shavuos. I wanted to be more original, so I created a savory spinach version. Adding part of the cream sauce to the spinach mixture results in a delightful, flavorful appetizer. Ashley Goldstein is a vegan professional chef and writer based in Tel Aviv, and a dear friend and mentor to me. Her website isTipsy Shades of Earl Grey, which also has a deeply tantalizing Facebook page. lot of her culinary and written work is on updated and vegan versions of Ashkenazi Jewish cooking, as well as inventive pastries and cakes. This recipe, for Spinach Artichoke Blintzes, is a beautifully modern – and very Tu Bishvat-appropriate – take on a classic Ashkenazi recipe, with an almost Italian twist. In her own words:
Some people use a spatula to turn the blintz over to cook the other side. Some people flip the blintz in the air and catch it on the other side with the frying pan. And some people, those who manage to make thin enough blintzes, don't even cook the second side. All of the above are fine; it depends on your personal preference.
Put a tablespoon of filling in the center of the blintz. This is where you can get creative; blintzes can be sweet or savory depending on the filling. Many blintz recipes include ricotta or mascarpone cheese, usually sweetened, along with another complimentary filling such as blueberries. Mushroom is another popular filling for a heartier blintz. But there are no limits; choose whatever flavor fruit preserves you like best and experiment from there.
Assemble: Place 1 blintz spotted side up on a work surface. Place about 2 tablespoons filling just below the center of the blintz, fold up the bottom then the two sides and then roll up from the bottom, covering the filling. Place on the baking sheet, seam side down. Fill and fold the rest of your blintzes and lay on the pan. Bake in oven about 10 minutes until they are hot and crispy.
Before the rise of Christianity, blintzes yeasted cousins, blini, were traditionally prepared at the end of winter to celebrate the rebirth of the new sun with a round food. The Eastern Orthodox Church adopted this tradition and blini are eaten on Pancake Day, better known as Mardi Gras or Shrove Tuesday. But Jews can take credit for one thing—we popularized blintzes in the United States. As Jewish immigrants started frying them up for Hanukkah and stuffing them with sweetened ricotta or farmers cheese for Shavuot, people began taking notice, mass producing them for freezer aisles across the country.
Most of my associations with blintzes arent as positive. I usually just envision the frozen ones that come in white and blue boxes at the grocery store or get served with a dollop of canned pie filling. To be completely honest, Ive spent most of my life avoiding blintzes, thinking theyd be bland, overly sweet, or—worst of all—mushy.
Heres the thing about blintzes: A blintz, by definition, is a thin, unleavened pancake, cooked on one side, folded around a filling, and pan fried. So where did the sugar come from? Our Eastern European ancestors had remarkably little access to sweeteners, and even oranges were delicacies. They certainly werent made with white flour. And if were going to make our blintzes sweet, why are they served as an entree? I put this in the category of squash pie and cranberry crunch—things that should be desserts, but somehow became side dishes. Efter Consulting Min egen Bubbe og en række venner i sagen blev det klart, at søde blintzes bare werent vil skære det. € ¨ ¨ ¨
