Penne with Zucchini and Cherry Tomatoes Recipe

Set up your layering station with the cooled cream mixture, roasted and drained vegetables, shredded Parmesan, minced thyme, biscuit crumbs, and parsley. Coat a 10-inch cast-iron skillet with 2 Tbs. of the butter. Reduce the oven temperature to 350F. Layer about 1/4 cup of the Parmesan on the bottom of the pan, then layer 1 cup of the vegetables, then another 1/4 cup of the Parmesan, and 1/2 cup of the cream, and a little sprinkle of the minced thyme. Repeat layering 3 more times until the dish is filled.

Garden fresh vegetables get a flavor kick from garlic, herbs and of course Parmesan cheese! These yummy roasted zucchini and tomatoes are sure to be gobbled up at your dinner table. In fact, I think I am going to make two pans next time just so I can have some leftovers!

My brother starts tomatoes and peppers from seeds and is always generous in sharing plants with us. This year he had Little Dude plant his very own cherry tomato seed and let him help at all the important steps along the way.

Then the tomato plants did what tomato plants do for us, grew. and grew, and grew and grew! I dont know how, because we rarely feed them and usually neglect them, but our tomato plants always have a way of growing huge.

In case you dont believe me when I say our plants get huge, here is some photographic evidence. This year we only planted the three tomato plants, one jalapeno, two broccoli plants, three cucumbers, some carrots and beets.

All of that to say we can pick dozens of cherry tomatoes each day and still have plenty. Little Dude and our neighbor kid snack on them when then play outside, which I just love. My husband and I have the habit of grabbing one or two as we walk by as well.

I love the flavors and textures from the Italian sausage and summer veggies sheet pan supper, so I thought I would do a twist on that to make it a side dish. Of course a nice big handful or two of Parmesan never hurt, so I tossed that on as well.

Little Dude had been craving shrimp, however, so I roasted some yummy shrimpto serve with it. Oh the sacrifices we make! These veggies would also make a great side dish for cheese stuffed chicken Parmesan meatloaf.

I think Zucchini is my very favorite Summer vegetable. So why not throw it into this amazing Parmesan Zucchini pasta side dish. Its a light cream sauce with fresh cherry tomatoes, zucchini and a little bacon. Who doest love Bacon? Its fresh and delicious!

Where did this Pasta with Zucchini and Cheery Tomatoes recipe come from? For me, I have a semi love for carbs, I mean what girl doesnt? But I also needed it to be a little lighter than other dishes and cut some fat. o this light sauce really does the trick for me and the bacon.. oh YUM its the right touch.

In the same skillet, heat 2 tbsp of olive oil and add scallion and garlic. Saut on medium-high heat for 1-2 minutes. Add cherry tomatoes, oregano, chilli flakes, and salt and pepper and continue cooking, stirring continuously until tomatoes start to burst.

Directions Place the oil in a 12-inch skillet and heat over medium heat. Add the mashed garlic and saut for 10 seconds. Add the onion and saut for 4 minutes. Add the tomatoes and saut, stirring, for 3 minutes with the cumin, oregano, cayenne, allspice, and salt. Add the zucchini and cook for 2 minutes. While the vegetables cook, place the almonds, cacao, garlic, and parsley in a mortar and crush together to make a coarse paste. Stir into the skillet.
