Vegetarian Summer Rolls  Japanese Sesame Miso Dipping Sauce

These vegetarian summer rolls are great when you want to eat healthy but really don't want another salad. It's all your veggies wrapped up into Vietnamese rice paper rolls and once you get the hang of it, they are pretty quick to make. Our Japanese Sesame Miso Dressing with it's savory nutty creaminess makes a delicious dipping sauce.

I especially love making these rolls because theyre a great way to use up whatever raw vegetables youve got lying around and are so easy to prepare. Its hard to go wrong with any variety of fillings, since its just about packing in as many contrasts of textures and flavors into each bite as you can and tying the whole thing together with a creamy dipping sauce on the side.

Ive eschewed traditional rice noodles for cucumber noodles and filled mine up with layers of zucchini, bell pepper, cilantro and juicy slices of mango. A crisp lettuce leaf stands in for the rice paper wrap making these summer rolls entirely raw.

Submerge one sheet of rice paper wrapper into the bowl of hot water for 2 seconds only. Allow the water to coat the entire paper evenly and allow the excess to drip off. Lay the wrapper flat onto your work surfaceit will continue to soften as you add the filling.

Place about cup of filling in the center of the rice paper wrapper. Fold the left and right sides inward over the filling then tightly roll the wrapper—without breaking the rice paper—the same way you would roll a burrito. Once the rice paper touches itself, it will stick together and seal the roll.

To make the spring rolls, heat cooking oil in a large skillet or wok over high heat then add the green onions, garlic and ginger and cook, stirring constantly, for 30 seconds or until fragrant. Add the pork and cook until no longer pink, 2 3 minutes. Add the cabbage, carrots and mushrooms and cook, stirring frequently, until they soften, 2 -3 minutes. Add the shrimp and cook, stirring, until opaque, 1 2 minutes.

Add theSan-J Tamari, rice vinegar, sesame oil, sugar, salt and pepper and cook for 2 minutes, stirring constantly. Line a rimmed baking sheet with a double thickness of paper towels and spread the mixture in a single layer on the paper towels to drain and cool. Blot the top of the filling with more paper towels.

Lay a clean kitchen towel on a work surface and have a large bowl of hot water nearby. Dip the rice paper rolls into the hot water just until they begin to become pliable, about 10 15 seconds. Lay the rice paper on the towel, place 3- 4 basil or mint leaves in a line in the lower third of the paper, top with ¼ cup of filling. Bring the lower part of the rice paper over the filling tightly and roll, tucking the sides of the paper over the filling. If desired, tie a chive around the center. Place spring rolls on a platter. Can be made several hours ahead, cover with plastic wrap and refrigerate.

Why dont I make spring rolls more often?!??!? is the first thing that came out of my mouth once I took my first bite of these ginger sesame spring rolls. I hate to admit this, but Ive had spring roll wrappers in my pantry for. et stykke tid. Way too long. I totally forgot about them, honestly, but not anymore!

Veggies are packed with tons of nutrients, many of which are fat-soluble vitamins, meaning your body needs fat in order to absorb the nutrients. The vegetable spring rolls on their own dont have tons of fat in them, apart from the tofu marinade, so we want to make sure our tofu dipping sauce includes a source of healthy fats enter tahini! The tahini not only adds the healthy source of fat were looking for, but the flavor and texture make this sauce super delicious.

My best tip for eating more vegetables is to eat them with sauces and dressings you like.
