This recipe for maple roasted sweet potatoes and brussels sprouts is my alternative to the traditional sweet potato marshmallow madness. Its just the right amount of sweet with a nice little crunch from the walnuts. If you think you dont like Brussels sprouts, roasted and mapled is hard to deny. An easy to assemble side dish for any holiday table, that reheats to perfection if you make it early.

Toasted walnuts are totally worththe effort, albeit minimal effort. Toastingadds a rich nuttier flavor and takes just a few minutes. Start by lininga baking sheet with parchment. Pour your raw walnuts out onto the baking sheet and pop them in the oven for just a few minutes while the other vegetables are roasting. You'll know they're ready when they have a nice shine to them.

Cut tempeh in half lengthwise and then cut each half into thin slices about inch thick. Transfer tempeh to a shallow dish and place in a single layer. Pour sauce over tempeh being sure to coat all pieces. Let marinate for at least an hour or overnight.

To get the right amount of bread crumbs, toast 2 slices of your favorite whole wheat sandwich bread, then crumble coarsely by hand. You can also use a food processor, but don't make them too fine – keep the crumbs the size of pomegranate seeds.
