A big delicious smoked turkey leg is something that most everyone has had, or at least smelled. Whether at your local fair or at Disney, these Traeger Smoked Turkey Legs are a classic dish that is easily made at home right on your pellet grill.
The list is short for these beauties, but there are some odd ingredients that you might have to order online. If thats the case, I have some options down in the recipe card for you to check out.

To make the brine, you first need to heat it up in order to dissolve all of the salt youve got going on. So throw a large stock pot onto the stove and put two gallons of water inside along with the curing salt, poultry seasoning or bbq rub, and the rest of the herbs and spices.

Once you are finished, leave the legs on the counter and go get the smoker ready. I like to prepare the smoker for about 240F with a mix of oak and pecan. Sometimes I use mesquite or other fruit wood just depending on what I am in the mood for and what I have on hand.
SMOKING THE TURKEY LEGS: Once the smoker is going and the temperature is at 240F or so, get the turkey legs and place them right on the grate leaving about 1 inch between them to allow the smoke to be able to flow freely all around the meat.

Safe internal temperature of turkey is 165. Although, through personal experience has showed me that at 165 internal temperature leg meat in not quite as done as it should be. Thats why I smoke my turkey legs until they reach 170.

Remember that smoked meats have a pink hue to them. There will be a pink ring around the meat and some pink hue even deeper towards the center of meat. It is still most important to make sure that your meat was cooked to the safe internal temperature. For turkey, safe internal temperature is 165F.

For todays recipe, were going with these hen legs. Even though they arent as big as the tom turkey legs, theyll still taste just as delicious, and they are more readily available. I personally like cooking hen legs; they dont take as long, and theyre a more logical serving size per person.
