Shrimp and Broccoli Lo Mein

I can't believe we are at the start of another week. I can't believe it's the end of March already. 2022 is, in my opinion, flying by. I'm behind on my reading, my running, you name it, I'm behind on it. Between the avalanches of snow we've received in our area, the inexplicable customer service nightmare that was getting a new transmission for my car, and this unpleasant tweak to my back, I've never gotten back to my routine post-holidays. And by routine, I mean normal, consistent exercise. For the mind, as well as the body. Now that I know the vacuum is at least a trigger for my back injury, I'll be avoiding that this month. I'm hoping April will be all about getting back to normal.

But in all honesty, noodles and I are likethis. Pasta has remained a true and steadfast companion all my life. At times I have pondered whether I may have a genetic predisposition that has led to my inescapable fondness of pasta. Whatever the cause, you can rest assured I like noodles in every cuisine imaginable.

And finally, I'll wrap up with what is quite possibly the best way to cook broccoli that I've just discovered. I'm sure you've all heard of blanching, I know it's a word that's thrown around the cooking world a lot. The gist of the technique is to throw desired vegetables into a pot of boiling water, boil for 1 to 2 minutes, then immediately submerge said produce in ice water. Submerging the vegetable in ice water rapidly stops the cooking process, locking in the bright color of the produce. For example, the broccoli in this dish. Broccoli has the tendency to turn a sad-looking brownish color. Not to mention that it's hard to get broccoli to the right texture when stir-frying. The solution is to toss the broccoli into boiling water, just until it turns bright green, and then immediately get it into ice water. The broccoli is fully cooked at this point, so you only need to warm it back up at the end of cooking.

On teampurple and teamblue, this plate is 9 points. On teamgreen it is 10 points. Most of the points come from the lo mein noodles, which is 7 points on all plans. You could easily serve this with brown rice if you wanted to lower the points.

Should i count points and calories?

My tablespoon of coffee creamer costs me 2 WW points but is only 35 calories. What I found is that if I was way over my points, I would get upset with myself, tell myself that why am I even bothering when I cant even stay within my points. Ive been tracking both WW and the LoseIt app for 28 days, and while I have been consistently over my points, I have been at or under my daily calorie goal of 1,525.

Lets take Easter dinner for example. My plate was 44 points – or 14 points over my TOTAL for the day. However, the meal was 870 calories. And I was still able to have breakfast and a late dinner and still be under my calorie goals for the day.

So far its been working! Just small daily goals that I like to check off at the end of each day. Ive only eaten after dinner once and that was because my blood sugar was low, but I ate a banana so I am not worried about that.

You have got to try this Instant Pot Shrimp Lo Mein Recipe. It is mainly a shrimp and broccoli lo mein with a few carrots, but you can add any other veggies that you prefer. We love getting shrimp and chicken lo mein take out. I have tried duplicating it many times on the stove and one other time in the Instant Pot but never really liked the results until now. This recipe is simple and easy to make. I think next time I will try it with shrimp and chicken.

Can you substitute spaghetti noodles for lo mein noodles?

I cant tell you how many times I have tried to find the lo mein noodles, that we like, from our local grocery store or even order them online. I have tried so many different store bought lo mein noodles but for some reason they never taste exactly like the take out lo mein that we get from our favorite restaurants. So, we now use linguine spaghetti noodles. It comes out very good in my opinion and is comparable to the lo mein noodles that we prefer from restaurants.

Typisk er det røde gule peberfrugter, zucchini, gul squash, løg og broccoli, og lige ud af personlig præference bruger jeg altid frisk hvidløg ingefær i stedet for pulver.
