30 Best Vegetarian Thanksgiving Recipes That Go Way Beyond Just Tofurkey

We have a good family friend who is on a paleo diet with additional restrictions including no gluten and cows milk products. These sun-dried tomato and turkey meatballs from Half Baked Harvest with a little swapping here and there fit the bill. I used Chvre in place of the ricotta, because I couldnt find sheeps milk ricotta, and Pecorino, made with sheeps milk, in place of the Parmesan. I also left out the red pepper flakes and adapted the baking time because these were going into the freezer. These are damned delicious if I do say so myself.

I also tested this butternut squash and spinach lasagna with gluten-free noodles, and it works great! I used Tinkyada gluten-free brown rice lasagna noodles - almost the whole 10 oz package. So, yes, this recipe is gluten-free friendly, for sure!

Prepare a baking dish - I used a casserole dish 11 inches x 8. inches x 3 inches deep. Grease the bottom of the baking pan lightly with olive oil spray. Spread of butternut squash filling on the bottom of the dish. Sprinkle lightly with mozzarella cheese.

I was blown away as I flipped through the pages, and I quickly realized that I was giddy with excitement and incredibly motivated and inspired!

This one gave me a bit of trouble. Who knew flipping a slice of bread with an egg in the middle would be so hard?! Look me a few tried but it was SO worth it. This breakfast sandwich will be a regular go-to in my home from now on!

Ricotta spinach pasta bake – all the flavors we love in ricotta stuffed jumbo pasta shells, but so much easier to make in this deconstructed casserole!

I went on a ricotta kick a few months back making Easy Lemon Ricotta Pound Cake, Light Fluffy Ricotta Pancakes and this lovely Raspberry Ricotta Breakfast Cake. Ricotta is a wonderful ingredient to use in a wide variety of recipes. When I found an extra container hiding in the back of my refrigerator recently, savory ricotta stuffed shells immediately came to mind.

This idea turned into a great pasta bake that Im thrilled to serve company at our monthly family Sunday supper. The recipe makes a filling 8 to 10 servings so if youre a smaller household, or empty nesters like us, you may want to divide the casserole into two or four smaller dishes. Once assembled, feel free to cover tightly and freeze for later! We adore make-ahead meals. If youre lucky enough to have leftovers, this Ricotta Spinach Pasta Bake reheats beautifully in the microwave making it great for meal-prep or office lunches.

Our pasta bake recipe uses a full 6 ounces of fresh spinach leaves, or about 4 cups, packed. Once the pasta is cooked al dente and drained, its dumped back into the warm pot and combined with the fresh spinach. The heat from the hot drained pasta wilts the spinach while you prepare the ricotta mixture. No extra pans are needed to saut the spinach, and no need to squeeze water from the frozen kind either. Easy peasy!

I love penne alla vodka and have been a devotee of Inas recipe for years, which takes hours to cook. Tieghans vodka sauce takes a fraction of the time and relies on garlic, crushed red pepper flakes, and, most importantly, a half cup of slivered sun-dried tomatoes, whose flavor in the end is so subtle it will have any recipients of your baked-pasta labors guessing.

Its simple: after you toss the pasta with the vodka sauce, you layer half of it into a 913-inch baking pan, top this layer with a mix of ricotta and heavy cream, top with the remaining pasta, and finally a layer of fresh mozzarella.
