Pickled Beet Eggs are so pretty to the eye and a fantastic portable, healthy snack. They are also easy to modify to a low carb diet, a slow carb diet, or just a generally healthy diet, making them the ultimate low carb snack. Its a great snack for those holiday road trips!

I first experienced pickled eggs on a road trip out East to visit my son in Connecticut, where he was going to host his first Thanksgiving dinner in his new apartment. He was 22 years old and this was kind of a big deal for all of us.

At one point in Pennsylvania as we stopped for gas, I scoured a truck stop for something to tide us over until dinner. It was looking grim until I happened upon these red hard-boiled eggs called beet eggs. After a quizzical group shrug we decided to give it a go. The consensus was not bad, in fact pretty good.

Later that night after arriving in Connecticut and checking out my sons new apartment, he asked if we were ready for appetizers. It was hard not to gasp as he brought out the tray of beautiful pink appetizers. Yep.pickled beet eggs!

I had never heard of this food item before and here they are in front of us twice in one day. I have to say, my sons were much fresher and much better, but the truck stops pickled beet eggs were not bad at all.

If you dont cook at all and dont like the idea of peeling a dozen eggs, you could buy some pre-peeled hard-boiled eggs in the grocery store, a jar of pickled beets and toss them together with some spices for the I dont cook method. It will elevate plain hard boiled eggs to a beautiful new high.

To hard boil peel eggs: Gently lower the eggs into a pot of cold water. Turn the burner on high and bring to a boil. When the water comes to a boil, turn off the burner, cover the pot and let the eggs sit in the pot for 5-7 minutes.

I found this recipe while searching for ways to use fresh beets from my garden. The beets are delicious and just different enough from my canned pickled beets that the change is refreshing. The cinnamon is perfect. I made deviled eggs out of the eggs. Very tasty, but next time I will leave any vinegar or lemon juice out of the yolk filling, as the outside has enough of that taste. The deviled eggs were quite eye-catching! Deep purple, fluffy yellow filling, green parsley sprinkled on top. But you do need to pickle them about 4 days for the eggs to purple all the way through to the yolk. To use fresh beets: Wash beets, leaving roots intact, and cut the tops, leaving two inches at beet. Barely cover with water, and simmer till tender. Dræne. Cool, and slip the skins off the beets. Slice as desired. You will need about 1-1/2 cups sliced beets and about 1/2 cup for what would have been in a can of beets.
