Light Sweet Potato  Kale Peanut Soup Recipe

This warm cozy Loaded Sweet Potato Soup is packed with flavor and topped with cheddar cheese, bacon crumbles, Greek yogurt sliced scallions. Perfect for any chilly day to warm you from the inside out!

1. Gather your ingredients. Youll need: butter, onion, celery, minced garlic, sweet potatoes, vegetable stock, Bolthouse Farms Original Plant Protein Milk, salt pepper. Toppings include: shredded cheddar cheese, bacon crumbles, plain Greek yogurt sliced scallions.

Melt the butter in a large, stock pot over medium-high heat. Add the chopped onions and saut for 3 to 4 minutes, then add the celery and saut for 5 more minutes until softened. Then add the garlic and cook a minute more.

Add sweet potatoes vegetable stock. Increase the heat to high and bring to a boil. Reduce heat to a simmer, and simmer uncovered until the sweet potatoes can be easily pierced with a fork, about 20 minutes.

In this light and healthy Sweet Potato Kale Peanut Soup, I happened to use a standard filtered  Apple Cider, but would have just as happily used the unfiltered.  Unfiltered Apple Cider Vinegar retains the "mother" of the vinegar, which is the cloudy stuff you sometimes see in a vinegar bottle. The mother is said by many to increase the healthful benefits of apple cider vinegar, so if a cloudy vinegar doesn't bother you, it is a smart choice. One of my friend's swears by maple syrup sweetened unfiltered apple cider vinegar for joint aches and weight loss. I'd rather cook, bake or pickle with it myself, but he seems pleased with the results.

So, I looked online, found this soup recipe and made it in about 10 minutes. And it was GOOD. I did not use apple, but I did throw in a big handful of kale. Hilariously easy and quite palatable.

Carrots the addition of carrot is a great way not only sneak in extra vegetables, it also helps to make a thicker and heartier soup. Also, being an orange vegetable, it wont change the colour of the soup when pureed.

This recipe uses two different cooking methods roasting and stove top cooking. Roasting is the first method, this will bring out the sweetness from the vegetables, and will also help add depth and flavour to the soup.

Heat 1 tablespoon oil in a pot andsauté onion and ginger until translucent. Add carrots andpotatoes,season with salt and pepper and cook for about 5 minutes. Pour in broth and cook, covered, for an additional 10-12 minutes.

In Cebu, we have a similar dish called binignit that is a similar concept of saba bananas, taro, and pearls cooked in a coconut milk sauce. Its eaten during holy week on Good Friday to avoid eating meat.

In addition to having mini sago or white tapioca pearls in ginataang bilo bilo, there are also other starchy balls. Bilo bilo are the handmade rice balls traditionally made of water and glutinous rice flour. Its a very similar process to making handmade tapioca pearls.

For this recipe, I made two types of bilo bilo from purple sweet potato and pandan leaves. In my opinion, you cant really taste the flavor profiles of purple sweet potato or pandan, but the color really makes the ginataang bilo bilo pop and make it more aesthetically pleasing.

Roll out the bilo bilo to your preferred size, but keep in mind they grow to about 20 more in the coconut milk.
