Old Fashioned Banana Nut Bread

Ive made fancier banana breads, certainly some with more ingredients, more spices, more of everything. But I keep coming back to this simple version that lets the beauty of a ripe banana shine straight through. You are going to look at this recipe and say, Wheres the cinnamon? Where are the chocolate chips? Where are the walnuts?  Never mind all that. Just try it this way and see if you dont agree.

Ahhhh the eternal problem: what to do with the ubiquitous over-ripe bananas? I freeze them for smoothies; I dip them in chocolate and then freeze them for an instant dessert; and I throw them in muffin batter for a nutritious snack. Then there comes a moment when my freezer fills up and I am kicking myself for buying so many bananas! And that is the time when banana bread comes to the rescue as a delicious gift from the Kitchen Gods.

To test for doneness, insert a toothpick into the center of the loaf 5 minutes before baking time is over. When the toothpick comes out clean, the bread is done. You can also visually check if the bread is done by looking for a nice medium brown color and also checking that the bread has pulled away from the edges of the baking pan.

What makes this banana bread old fashioned?

Pour batter into a wellgreased 9- x 5- x 3-inch loaf pan. Bake at 350 for 55 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan. Remove bread from pan, and cool completely on a wire rack. Slice and serve.
