Crispy Baked Egg Rolls  Karyls Kulinary Krusade

These baked chicken egg rolls show up at our table, served alongside rice and veggies, as a favorite meal or appetizer for our family. Freeze these egg rolls for a quick and convenient weekday meal.

This recipe says easy, but I I didn't anticipate THAT easy! I was completely blown away by how delicious these were! I am excited to add these to my meal prep rotation and freeze some for a quick meal or snack! --Maddie

Im excited about this one! We basically stuffed egg rolls with pizza filling. We had initially though that we would make them fried, but we ended up baking them because we know its so much easier for everyone. You can definitely change up the filling if you like something different, but I personally love pepperoni. My favorite thing about this recipe is the ease of using the egg roll wrappers, and how crispy and chewy they get after baking. So freaking good. Bookmark this one! Teri

To assemble: Stack two egg roll wrappers together and brush with beaten egg. Scoop cup of filling onto the stacked wrappers and form into a log. Top filling log with a few slices of remaining pepperoni. Fold in sides of wrappers, then tightly roll until sealed.

Sometimes when we order Chinese food, I think to myself: Would it make me too much of a pig if I just ordered three egg rolls and nothing else? I have yet to give into my desire to just feast on egg rolls but Im really only one bad day away from probably letting it happen.

However, I did have two issues when making this recipe. Problem 1: I had to drive around to all the grocery stores in the area before I found egg roll wrappers. Even then, all I found was spring roll wrappers. Which in the end are similar enough, but they are a bit thinner so that means they come out a bit crispier. Problem 2: Im the worst egg roll wrapper EVER! Im not really sure why Im so bad at this but I just cant get them all to be the perfect size. In the end its really not a big deal since its just my family eating them BUT I guess if I were looking to win a gold medal for a egg roll wrapping I would not win. Im not even sure I would place.

Oh and back to problem number 1, guess where I finally found the wrappers the Asian market. Duh. Why didnt I just go there in the first place? Ill never know. However, most large grocery store chains do in fact carry egg roll wrappers. Mine were just all out on the day I needed them. Apparently everyone wants to make egg rolls. Which makes sense they are in fact delicious.

Set avery large non-stick skilletover medium-high heat. Add 1 tablespoon olive oil. When hot, add mushrooms and cook just until they start to soften, about 3 minutes. Add the cabbage, bean sprouts, ginger, and chili garlic sauce. Cook just until the cabbage starts to soften and cook down slightly, about 3 more minutes. Stir in the soy sauce and turn off the heat.

Fill your wrappers! Have a small bowl of cold water at the ready and then do the following: Lay your wrapper in a diamond shape. Add 2-3 tablespoons of filling to themiddle of the wrapper. Fold the bottom up around the filling and snugly tuck it in. Dip your finger the water andmoisten the remaining three corners of the wrapper. Fold in the left and right corners then roll up the egg roll and secure the top. The water on the wrapper is what keeps it closed.

I use groundporkand recommend 85% lean. Many grocery stores now sell ground pork, or you can ask your butcher to grind it for you. You could use 90% lean, but I wouldnt go any leaner than that.

The egg roll wrapper comes out crispy and golden brown, making it hard to detect the difference. I served my egg rolls with a sweet chili soy dipping sauce. To make this just combine soy sauce, sweet chili sauce, water, and vegetable oil and whisk to combine. You can also serve them with sweet and sour, soy sauce or one of my favorites, spicy mustard. Yum!

Forvarm ovn til 400 grader. I mellemtiden i en stegepande på mediumvarme add i 1 spsk olie. Tilsæt rejer og kog indtil fast og gennemskinnelig ca. 2 til 3 minutter. Fjern fra pan og sæt til side. Tilsæt den kogte rejer tilbage i panden med vegetabilsk blanding. Rør i sojasovs, sriracha og fiskesauce. Tage af varmen og kaste i scallions.

Til frysning: Bages som instrueret og lad ægruller efter bageplade helt afkøles. Når du er afkølet, sæt bageplade i fryseren i et par timer til at flash fryse. Fjern bageplader fra fryseren, sæt ægvals i en fryser sikker lynlås taske, og læg tasken i fryser. For at genopvarme, forvarm ovn til 350 og bage frosne ægruller i 18-20 minutter eller indtil opvarmes igennem.
