When you coat the chicken, really make sure you work the flour into every crevice of the chicken. You want to create lots of tiny flaky parts these are what will give the chicken that rough/craggy crunchy casing.

Although I am referring to this as a breakfast sandwich, this spicy gluten-free fried chicken sandwich is perfect for lunch and dinner. The use of JUST Egg Folded is what makes this version a morning meal option.

Our favorite mayo is Kewpie, which isa deliciously rich, silky offering from a Japanese brand. It's made with extra egg yolk and tastes a little saltier than American brands, and can hold up well even to strong flavors like pickles and spice-packed fried chicken batter.

Next, heatthe a few inches of oil to around 325 F in a deep pot. he oil should be deep enough so it will cover the chicken breast. Next, you are going to dip each chicken piece in the buttermilk mixture and then in the flour-spice mixture to create a thick and satisfying crust. This will create a batter on the surface of the chicken. If you have enough flour mixture left, dunk the pieces in again to repeat for extra coating. hen you place the chicken in the flour bowl, it helps to press flour onto the coated chicken. You can do this with your hands if you're more comfortable, or transfer the chicken pieces from pan to pan with a fork.

To avoid too much mess, arrange the dishes of chicken, buttermilk, and flour-spice mixture close together they can be touching to create an assembly line effect with less cleanup. You can even coat the chicken pieces at once as the oil heats up while they are coming to room temperature.

To prepare the avocado cream, peel the ripe avocado, core and dice it. Then salt the avocado pieces and drizzle with lemon juice so that they dont brown. Set aside for a few minutes so that the salt can soak up the moisture, which will facilitate the blending. Press the garlic in a garlic press. After a few minutes, pure using a blender, then combine with Greek yogurt and pressed garlic.

Now, assemble the sandwich. Spread avocado cream on the bottom half of the flatbread, then add the lettuce, tomato, and cucumber slices. Cut the chicken breasts into strips and add them to the sandwich. Next, add the sliced chili and sambal oelek. Everyone who loves cheese as much as I do can put slices of cheddar cheese on top and let it melt for a few seconds. Et voil, your spicy chicken sandwich is ready to eat!

Why Use Buttermilk:Buttermilk gives the chicken the authentic southern taste and helps the crust develop all those small crinkles that make it extra crispy. If you dont have buttermilk at home, just make your own. Stir 1 cup of milk with 1 tablespoon lemon juice or white vinegar in a bowl and let stand for 5 minutes until the milk begins to curdle.

Cornstarch:Cornstarch helps make the crust super crispy and light as opposed to just battering the chicken with just flour. I highly recommend using it for the best results but If you dont have cornstarch at home, replace it with more flour and add 1 tablespoon of baking powder.
