Pulled Pork Slaw Eggrolls

For my first recipe of 2022 they shipped me one of theirSweet & Smoky Marinated Fresh Pork Roasts, which I decided to toss into my slow cooker to turn into delicious pulled pork that I combined with homemade macaroni and cheese to make Pulled Pork and Macaroni and Cheese Forårsruller!

After so many recipes of my own plus all the ones you can find on Smithfields website I keep getting worried that Im going to run out of ideas, but luckily for me they offer a huge variety of fresh cuts including pork roasts, ribs, chops, sirloins and tenderloins that can be slow-cooked, grilled, roasted or sautéed.

The other thing I love about Smithfield Marinated Fresh Pork is that since it comes seasoned and marinated all the prep work is already done for you. Aside from putting the Sweet Smoky Marinated Fresh Pork Roast in my slow cooker and adding half a cup of water there wasnt a single other thing I had to do besides relax as the smell of fresh pulled pork started wafting through the air in my kitchen.

Once my pulled pork was done I whipped up some macaroni and cheese, fired up my deep fryer Ok, I guess I didnt technically fire it up, I just plugged it in  and one by one I rolled up the Pulled Pork and Macaroni and Cheese Egg Rolls and dropped them into the 375° deep fryer oil. Now, for as much as I love pulled pork on its own and macaroni and cheese on its own, the combination of both of them inside a crispy, golden brown egg roll wrapper somehow made me enjoy them even more!

Egg, ham and jalapeo brioche rolls

Using one egg roll wrapper, add a small amount around 2 tablespoons of pulled pork and around 1 tablespoon of coleslaw to the center of the egg roll. Fold in the left and right sides of the egg roll so they overlap in the middle.  

Youll want to have a few wire racks set up, with paper towels underneath to catch the oil. Heat 2 inches of vegetable oil to 375F. Its important to maintain this heat so the rolls down soak up too much oil as they cook. I use my trusty Thermapen instant read digital thermometer to quickly measure the temperature throughout the cooking process.

For the egg roll filling, combine the chopped pulled pork and the Sweet Kentucky Bourbon Grilling Glaze. With one corner of the egg roll paper facing you, fill the middle of the wrapper with one tablespoon of pulled pork and tablespoon coleslaw. Fold the bottom corner up and away from you, and tuck each side corner tightly into the middle. Dip your fingers into water and moisten the eggroll wrapper on the corners until it sticks. Roll the bundle toward the top corner, dip your fingers in the water again and seal the egg roll tightly. Brush all sides of the egg rolls with olive oil.
