What is the difference between raita and tzatziki?

Step one Cut the cucumber in half lengthwise. Then use a teaspoon to scoop out the seeds, which should be discarded. If you want, you can also peel the cucumber, but I like to see the green colour in the raita.

Raita is an Indian condiment made with yogurt and vegetables. Cucumber is a popular version of this sauce or snack, but it can also be made with radishes, carrot, peas and sometimes even fruit. Similar totzatziki, serve with vegetables, pita or crackers for dipping. As a sauce, it's great on rice and chicken.

In most Western cuisines, we tend to use condiments to add intense flavoroften spicinessto our foods. But, in Indian cuisine, much of the food is already so flavorful and spicy that it needs balance. Rather than being used to add flavor to your meal, Indian raita is used to mellow flavor!

And, just like nondairy milks, there are plenty of nondairy yogurt options availablelike coconut, almond, cashew, and soy milk yogurts. Whichever you prefer, I just recommend choosing a plain, unflavored, unsweetened variety of yogurt!

Indian yogurt is thick and tangy and made with full fat milk. Its fresh tasting and more similar to Greek yogurt than American. When I was 11,my family lived in a small village in rural Gujarat for a few months, and as was common in the community made our own yogurt from regular doorstep deliveries of what was quite possibly unpasteurized cows milk.

If multiple options are available to you, choose a yogurt you know to be on the tangier side and thicker. Thinner, more watery yogurts are not ideal for raita, but if thats all you can find dont worry about it, it will still taste great and there are some other ingredients in there that will help thicken it.

Choose the plant based yogurt you like, but the best one is definitely the one you have access to! Homemade works wonderfully as well if you follow that routejust make it plain with no added sugar.

THIS is how tzatziki should be. NO ONIONS! I've never had tzatziki with onions before but notice that most of the recipes on here seem to include them?! This is simple, delicious and exactly as authentic Greek tzatziki should be. I make this with virtually fat free greek yoghurt and about half the oil and it still comes out beautifully. Keeps in the fridge for 2-3 days, however I suggest you make it the evening before you want it because leaving it overnight really allows the flavours to infuse. Yummy!

Whats the difference between raita and tzatziki?

I personally like Raita best when its made with plain soy or coconut yogurt that has a thick consistency. But if you cant find a thick vegan yogurt, you could also mix in some silken tofu or dairy-free sour cream or cream cheese to create a thicker consistency. For more richness, you could also stir in a bit of coconut cream or cashew butter, or tahini.
