Rated 4 out of 5 by slk0711 from Just OKI love the ease of making sauce in the Vitamix but this tomato sauce was just OK. I think it was the tomatoes, they just weren't flavorful enough. The sauce had an earthy flavor which I didn't care for. I ended up using a full 4 oz can of tomato paste and about 2 tablespoons of sugar to cut down on the acidity of the tomatoes and it still was just ok. The next time I make it I'll wait until our home grown tomatoes are here. Still loving my Vitamix!

Rated 2 out of 5 by McGoogly from Overwhelmingly oniony!This was the first recipe I tried in my new Vitamix - it is certainly simple to make but both my husband and I had to leave the kitchen as it was blending and heating up because the onion fumes were so powerful they made our eyes hurt! Once the sauce was made it was also too oniony for our taste but the consistency of the sauce was great and I was so impressed by how hot it got. If I make the sauce again I think I would saut the onions first so they lose a bit of their harshness.

Made no changes, only doubled the recipe to feed the whole family. This is an absolutely delicious, rich sauce. One of the best I've ever tasted. Rave reviews, although this will be something to make on special occasions only since it's obviously not on the healthy side ;.

Heat a large Dutch oven over medium-high heat. Add the olive oil. When the oil is hot, add about two-thirds of the pestata and cook, stirring occasionally, until the pestata dries out and sticks to the bottom of the pot, about 4 to 5 minutes. Add the tomatoes, red pepper flakes, salt, and 1 cups pasta water. Bring to a simmer.

Spread half of the pasta and meatballs into a 9-by-13-inch baking dish. Cover with the hard-boiled egg slices in an even layer. Sprinkle with half of the remaining Pecorino and Grana Padano, half of the Caciocavallo, and all of the sopressata. Spread the remaining pasta and meatballs over top. Sprinkle with the remaining grated Caciocavallo, Pecorino, and Grana Padano. Bake, uncovered, until browned and bubbly, about 20 to 25 minutes.

Using highest saut function, cook pancetta in Instant Pot, stirring often, until browned and fat is well rendered, 6 to 10 minutes. Using slotted spoon, transfer pancetta to paper towel–lined plate; set aside for serving.

Add onion and salt to fat left in pot and cook, using highest saut function, until onion is softened, about 5 minutes. Stir in garlic, anchovies, fennel seeds, and pepper flakes and cook until fragrant, about 1 minute. Stir in tomatoes and their juice, broth, and water, scraping up any browned bits, then stir in pasta.
