Puff Pastry Fruit Tart  An Easy Dessert  Chef Lindsey Farr

Summers scream fresh fruit and one of our favorites are vine-ripened blueberries. Every year, we pick several pounds at a local farm, which keeps our freezer stocked throughout the year. One of my favorite recipes to make with our blueberries is thisHeavenly Blueberry Tart Made with Puff Pastry.

Lets get this out of the wayyes, they sent me a sample. No, they did not pay me for a review. That saidIm a fan. I love this stuff. As with most honey, its best enjoyed without added heat for maximum flavor, but this honey held its own in this easy summer tart.

There you have ita little honey for a subtle sweetener, lemon juice for balance, puff pastry for a crust and the star of it all: a mixture of stone fruit. Summer-lazy with just four ingredients and in less than 30 minutes.  

Refrigerate this for a few hours at most. I tested it by letting it sit overnight and it was ok but not quite as good. I waited two days and the puff pastry was too soft and the texture and flavor was off at that point. Stick to eating it the same day.

The assembly of this tart hinges on creating those little puff pastry walls. Those walls create a boat for your pastry cream filling to contain all that goodness! The key to adhering two pieces of puff pastry together?

I knew I was going to get rid of at least two of those jam containers though, once I made my way to the freezer and spotted the puff pastry. always have some in my freezer – the sheets and the shells.

Given puff pastrys impressive nature once baked, it could probably be the eighth wonder of the world. But its actually only made up of three ingredients flour, water, and butter. The dough is folded multiple times to create hundreds of layers.

When baked, the steam in both the butter and the dough release, causing the layers to rise about eight times higher. ts the separation of these hundreds of layers that gives the pastry its light, flaky texture.

Puff pastry is totally easy to prepare, completely versatile, and absolutely delicious great for when youre in a pinch, entertaining, or just preparing a quick family dinner. I usually love to go all out and make a fancy shmancy dessert for Easter. Coconut cake, Banana Chiffon Cake, lemon pound cake with coconut glaze, coconut cream pie, lemon bars, etc. And this is all fine and dandy except for the fact that everyone gorges on chocolate and jelly beans and the dessert just sits around. In all its unappreciated glory. Last year I decided to do something lighter and easier to prepare. I found this recipe foran Easy FreshFruit Tart from Americas Test Kitchen from Cooks Illustrated.

Microwave remaining cup of jelly in a large bowl until melted, about 30 seconds. Add the berries and toss gently to coat. Spoon the berries over the cream cheese mixture and refrigerate until jelly is set, about 1 hour.
