I use two skillets to make this recipe. I used to make it in one, but something always came out wrong. I've learned that when I cook my potatoes in a separate skillet they cook more evenly and stay nice and crispy when they're added to the other ingredients right before serving.

For my sausage and pepper recipe, I used smoked beef sausage, bell peppers, and onions. You can customize the recipe, by adding more if youd like, but for this dish I think less is more. You can also substitute the beef smoked sausage with pork, chicken, or turkey sausage! The bell peppers that I used where orange yellow. However you can use any colorful sweet peppers!
Some of my fave fair foods are sugar dusted slabs of Fried Dough and long ears of Corn on the Cob Drenched In Butter. And the state fair food I'm craving here? Sausage, Peppers and Onions on the grill!
