Pumpkin Cheesecake with Pecan Graham Cracker Crust

In the month of November I shared with you guys two different types of pies that I used this crust for. What is great about this crust is that depending on what your recipe calls for, cooked or uncooked crust, this crust works great in both.

For the crust: Preheat oven to 350°F. Butter the bottom of a 9-inch pie pan. Combine the pecans, graham cracker crumbs, sugar and salt in a medium bowl. Add the butter and stir until well blended. Press the mixture over the bottom and up the sides of the prepared pan. Bake until almost just golden brown, about 10 minutes. Køligt helt.

Pour enough hot water into the roasting pan to reach about 1 inch up the sides of the springform pan. Bake for 1 hour. Turn off the oven and let the cheesecake sit in the oven for 1 hours longer.

Lately Ive been serving up pumpkin cheesecake annually for Thanksgiving. Its not that I dont love pumpkin pie. Its that after serving various different pumpkin pies, including my pumpkin tart, my chocolate pumpkin pie, and my caramel pumpkin pie for 20 years after our annual Thanksgiving dinner, its nice to make a change! This pumpkin cheese is rich and creamy, without being overly heavy. It has a generous amount of wintry pumpkin pie spice and is a family favorite even for folks who skip the classic pumpkin pie.

How do i make pumpkin cheesecake?

It sounds fussy to do but a water bath has multiple functions in making a cheesecake. First it keeps the baking slow, allowing for the center of the cake to cook fully without the edges of the cake baking too fast. Liquid water will only get to 212F before it evaporates. So, the edges of the cheesecake dont over heat.

How do i prevent cracking in cheesecakes?

So, how is this graham cracker pie crust different? I leave the graham cracker crumbs larger and more coarse than others so that the crust does not get soggy from the filling. The texture of the added pecans and coarse crumbs is a delicious contrast to the creaminess of the filling. The hint of Mexican cinnamon leaves everyone asking, what is that wonderful flavor?

Break the crackers into quarter or dime sized pieces and add the to the food processor in small batches.  This allows the crackers to break evenly into crumbs and not turn half of the crackers into dust while large pieces remain.

I made my chocolate pies in this graham cracker pie crust for the big family gathering at Thanksgiving this year and noticed that people were scraping the extra crumbs on the bottom of the pie plate onto the top of their pie. They loved this pie crust!
