Scoop up 16 walnut-sized balls of dough and place on the baking sheet. The cookies will not really spread, so they can be placed fairly close together. Flatten the balls of dough using the bottom of a glass keeping a small piece of parchment paper in between to prevent sticking. Cookies should be about -inch thick and 2 ½-inches in diameter.

Fresh orange zest and juice give this spiced cake a bright and vibrant flavor

cup cooking oil teaspoon ground cardamom1²⁄3 cups flour1 cups almond meal¾ cup sugar2 teaspoons baking powder⅛ teaspoon saltZest and juice of 1 orange, divided, plus curls of 
peel from 1 orange, to serve cup vegan plain yogurt
, plus 1 heaping tablespoon per person, to serve²⁄3 cup unsweetened vegan milk 2 teaspoons vegan apple cider vinegar

Friends of Frank makes wholesome treats; gorgeous cookies that are made with only natural ingredients and nothing artificial.Made on a base of almond meal and sweetened with organic panela sugar, these cookies also feature crunchy almond chunks and are flavoured with all-natural orange oil.

Citrus fruits like oranges, lemons and grapefruits grow well in Arizona weather. We are lucky to have an orange and lemon tree in our yard and every winter we enjoy the bounty of home grown citrus. I also happen to love citrus flavor in baked goods and this Vegan Orange Almond Cake is one of my favorites. Its the perfect teatime cake that is light, slightly nutty and tasty. I especially love the crunchy almond topping.

A slice of the Vegan Orange Almond Cake is good on its own with a cup of tea. If it has been in the refrigerator, I like to heat it up in the microwave slightly for a few seconds. For some extra decadence I like to serve it alongside some dairy free whipped cream.

This cake is Vegan, Dairy- Free, Egg free and can be made Gluten- free if you use 1:1 gluten- free flour blend. However, please note that we have not tested this recipe for the gluten-free version.

Milisa was quite specific about using thick-skinned oranges for the recipe, and for that, we turn to navel oranges. Boiling the peels of the navel oranges softens them so that we can then chop them finely using a food processor. You can also process the cooked peel using a hand-cranked grinder if youd like to prepare this recipe old school. You might be wondering what to do with the four peeled oranges? Just eat em for a healthy dose of Vitamin C.
