I began checking into my canning books and asking friends for recipes, but all of the recipes had many more ingredients than I wanted to deal with in making my relish. And then I saw the recipe in my Simply Canning Cookbook. It seemed to be just what I was looking for. Since this book was a recent purchase, I had not thought to look here first, but I wont make the same mistake again! The recipes are simple and straight forward, combined with a wealth of canning know how and experience. I like the way Sharon wrote the book as it is much the same format I have used in teaching canning classes.

Anyway, back to the perfect sweet relish recipe. I was a little surprised at how much onion and green pepper were in the recipe because I dont taste it. Almost every recipe had these ingredients, so I decided to include the onion and peppers. And, Sharons recipe had a more reasonable amount for my taste.

Do you need to sterilize the mason jars prior to water bath canning? According to experts in canning. You can skip the sterilization method for jars if you will do the canning and process for at least 10 minutes for 250 ml jars. Some people will process for an extra 5 minutes if they will skip the sterilization prior to water bath canning. I think the disadvantage of processing for extra time is you might end up with a mushy relish. Of course, it is always a good idea to sterilize your jars.

Can you substitute pickles for relish? Bread and butter pickles or sweet pickles like dill pickles perhaps are the closest substitute for sweet pickle relish. Finely chop them for a quick version or substitute for relish.

Is 17 pints of dill relish a wee bit overboard? Måske. But Im planning to use it as an easy mix-in for potato salad and tuna, as well as offering it at the eleventy-billion BBQs we have each summer, so Im not one bit worried about using it up.
