You know how sometimes it takes a few episodes to really get into a show? Give it two or three episodes to make a decision on if its going somewhere and worth continuing. Of course, after youve spent that much time trying to make a decision, youve wasted a lot of time if its a dud of a show. We started watching The Bodyguard on Netflix. It seriously sucked us in immediately. No wondering if it was good or not. It was good immediately. And of course the intensity and music to go with it just gets your heart racing. If you like suspenseful shows, this one is absolutely worth checking out. It has you thinking and wondering who is doing what and even what secrets people are keeping. I cant wait to see what happens next. The only downfall is its apparently a super short season, but hopefully, like other great Netflix shows, it comes back for a second season. sooner than later.

Overraskelse! Winter is finally making a slight appearance this week. Dont get me wrong, its been cold. very cold at times even. But, weve been lacking our usual snow. Most years were buried in several feet or more. Weve seen the grass more this winter than I ever remember from years past. And just when I thought we were heading to an early spring. is it still possible that come March, all of this nonsense will be over and well be moving on to warmer temps. and no snow? One can only hope I suppose. Its been a weird winter across the country and Im sure were all in agreement, were ready for spring.

Divide batter equally between prepared liners using a large cookie scoop. Bake for 15-18 minutes or until a toothpick inserted comes out clean. Cool in pan for several minutes or until easy to handle. Overfør til et trådstativ for at afkøle helt.

When cupcakes have cooled completely, prepare frosting. In a large bowl or stand mixer, beat together cream cheese and butter until fluffy and well combined. Theres like a million strawberry cupcake recipes out there and to be honest, its incredibly difficult to get a good strawberry flavor in your cake, while preserving the tender texture of cupcakes.

Theres a few ways to incorporate strawberries into cake or cupcakes, like roasting them, pureeing and reducing them, baking them straight into the cake like I did with these strawberry mojito cupcakes or using them fresh! Although those mojito cupcakes are pretty darn good, I still prefer that fresh strawberry flavor.

Cream cheese frosting is very simple to make. Its the same as American buttercream, where you just whip the butter and cream cheese together for a few minutes, then add in the powdered sugar and any flavors you want.

The only thing with cream cheese frosting is to be careful with adding in extras, like the strawberry jam. Its already a very soft frosting so extra liquid will make it softer. I like to refrigerate my cream cheese frosting for 30 minutes once its done, then whip it again and pipe.

This is the star of the show. Strawberries and cream cupcakes would not be strawberries and cream cupcakes without the strawberries and cream. Lol, thats a mouthful . This is basically just part of the cream cheese frosting mixed with fresh strawberry chunks and as you can see from the images, I filled the cupcakes as high as I could!

Once the cupcakes are done, refrigerate them for 30-60 minutes until the frosting firms up. Then cover them completely in an airtight container or wrapped in plastic wrap. Because this has cream cheese frosting, I recommend storing them in the refrigerator. They can be refrigerated for 7-10 days but keep in mind the cupcake will slowly dry out with time so I recommend freezing after 1-2 days.

Slice 8 oz of strawberries and add them to a sauce pan along with 3 tablespoon of granulated sugar. Heat the strawberries over medium heat until the berries break down and thicken, stirring them occasionally. Simmer the berries until they have reduced down to cup. Remove from the heat and allow to completely cool.

Add cup of softened, unsalted butter to bowl and mix it with an electric mixer until it is pale in color and fluffy. Then add in 4 oz. of cold cream cheese and mix until thoroughly combined. Add cup of freeze dried strawberries to a food processor and pulse until they are finely ground. Add in the ground freeze dried strawberries and combine. Lastly mix in 1 cups of sifted powder sugar. Mix until the frosting is fluffy.

Bake the cupcakes and let them cool. Once cooled, use an apple corer or use a sharp knife to cut out circle in the middle of the cupcakes and scoop out any extra cake so you can fill them with the filling.

Use 10-12 fresh large strawberries and pure them in a blender or food processer.   Place the pured strawberries in a microwavable container and nuke them on high for 4 ½ minutes.   Stir them 1-2 times while they are cooking while the mixture thickens up and condenses down.   Place mixture in freezer or fridge to cool mixture off.   When making the frosting, if the pure is not reduced to the correct amount it will make frosting runny.
