Who doesnt love a good BLT? The flavors of lettuce, tomato, and bacon somehow make an undeniable combination. Unfortunately, its not great for those of us trying to stick to a low-carb diet. Thats why we took the classic sandwich and deconstructed it into a BLT salad with added protein and loads of flavor. Thick-cut bacon accompanies fresh cherry tomatoes, chicken, parsley, and our favorite addition – avocado. This paleo BLT salad recipe is finished with a simple and light dijon balsamic dressing, giving you a salad that is sweet, salty, and full of texture.  

I recently discovered Trader Joes cooked uncured bacon and its a life changer. I like the idea of adding bacon to dishes but I usually dont want to cook 1 slice of bacon just for my salad or sandwich. Sometimes I think, Ill just save some of my breakfast bacon to use later.. This tasty, crunchy, rockin wonder of goodness, otherwise known as a Whole30 compliant BLT chicken salad, is my jam. Its fast, filling, packable, snackable, and crazy easy. Ive been eating it for three days and I regret nothing. Are you ready for dinner in 30 minutes? Excellent. Lad os gøre det.
