Roasted Half Chickens  Herbed Gravy with Brown Butter Mashed Potatoes  GingerGlazed Carrots

Cooking for two even Thanksgiving dinner doesnt need to be complicated and this meal features a huge time-saver: pre-seasoned Toasted Lager Half Chicken from Farmer Focus. Turkeys are enormous, and seasoning and cooking one is a huge project, especially for just a couple people. A turkey breast is often presented as an alternative, but Id suggest that this pre-seasoned half chicken is nearly effortless to cook and gives you and your guest a chance to each have light and dark meat. And you can make a lovely gravy with the pan drippings.

Featuring smoky notes of hops, paprika, garlic, and lemon, Farmer Focus pre-seasoned Toasted Lager Half Chicken is richly flavored and roasts up beautifully. Theres no need to season or salt the chicken ahead of time Farmer Focuss balanced seasoning has already fully permeated the meat, meaning all youll need to do at cook time is set the chicken on a pan, roast, carve , og nyde! 

The nutty, smoky notes of toasted lager go wonderfully with the flavors in this Thanksgiving menu. As they cook alongside the chicken, the Brussels sprouts and onions take on the flavor of the chicken. Later, some of the onion is minced and added to the pan gravy, along with all the pan drippings.

While the chicken is resting, pour off any accumulated fat from the skillet that was used to brown the chicken. Return it to the stovetop over medium-high heat and, when hot, deglaze the pan with the white wine. When the wine has nearly completely evaporated, add the remaining rosemary sprig and the chicken stock and continue to cook until the stock has reduced by half, 4 to 5 minutes. Whisk in 2 tablespoons of the remaining garlic-rosemary pure and then add the cubed butter little by little, shaking the pan to help the butter melt before adding addtional cubes. Do not allow the sauce to boil or it will separate. When all of the butter has been incorporated, taste the sauce and season with salt and pepper if necessary. Remove the pan from the heat and cover to keep warm.

Note: Any remaining garlic-rosemary purée will keep in the refrigerator for up to several weeks. It can be used to flavor mashed potatoes, soups, stews, or sauces, or spread onto crostini or sandwiches for an extra layer of flavor.

But despite the feelings of sadness I experience when I see a half chicken, I have been buying them lately because the prices have been pretty great. n fact, I have decided that roasting a half chicken is my favorite way to roast a chicken. I seldom buy the whole chicken anymore, I just purchase two halves. I think they cook more evenly anyway.

You could serve the half chicken whole and carve it at the table, but I much prefer to get my big old chefs knife out and cut it right down the middle between the leg and wing cutting right through the bone. Its not hard to do, you just need to get your weight above the blade and give it good thrust downward with one hand on top of the back of the blade to hold it stable.

The chicken can be cut up into smaller pieces. From here, its pretty easy to find the joints and cut them apart to separate into wing, legs, thighs and breasts real easy. And this is partly why roasting a half chicken is my new favorite way to cook a whole chicken. Its less messy, it cooks more evenly, its nice and juicy, its easier to cut and serve, and the flavor is amazing.

Method one: Heat a skillet over medium-high heat. Liberally sprinkle the seasoning blend all over the skin of the chicken, making sure to get under the wings and legs. When the skillet is hot, add 1 tablespoon oil, swirl it around to coat the pan, and add one of the half chickens, skin-side-down and cook for 6-7 minutes until good and browned. The heat on the skillet may need to be turned down to medium during cooking to prevent excessive smoking. When browned, return the half chicken to the sheet pan and brown the other chicken half.

For some reason, a lot of folks find the thought of cooking a whole chicken daunting. Maybe its because turkey cooking can be a bit cumbersome? But we are talking about a bird thats generally 1/4 the size of a turkey.
