Sheet Pan Chicken with Rosemary and Grapes

Balsamic Roasted Grapes with Whipped Feta is a great dish to serve at any gathering! It contains theperfect combination of sweet and savory ingredients that friends and family will enjoy. verybody loves the combination of grapes and cheese together, and this kicks that notion up a notch. nd although this dish may sound fancy, its actually very easy to make and great for fall and holiday gatherings.

You may be surprised to learn that grapes are very good for us and may help support immune health. Grapes are a natural source of beneficial antioxidants and other polyphenols which help to support healthy cell function. Healthy functioning cells are essential for a healthy immune system.

In our home, we love to snack on fresh grapes, but lately weve developed a love for roasted grapes. If youve never tried roasted grapes before then youre missing out on a real treat! When roasting grapes, the natural flavors are enhanced making them taste even more amazing! Roasted grapes are a great addition to salads, or roasted veggies, but our favorite way to enjoy them is in thisBalsamic Roasted Grapes with Whipped Feta dish!

Forvarm ovnen til 400F. Place grapes onto a baking sheet. Drizzle the balsamic vinegar and olive oil over the grapes, and sprinkle with fresh rosemary and salt/pepper to taste. Toss and roast in the oven for 30 minutes, or until the grapes become soft and wilted.

4. Roast walnuts 9 to 12 minutes in oven, or until golden-brown. Remove, sprinkle with more kosher salt, if desired, and cool. Increase oven heat to 400F. Roast olives and grapes 20 to 25 minutes, or until sauce is syrupy, stirring occasionally. Cool 10 minutes, stirring occasionally. Sprinkle walnut pieces over grapes and olives, and serve warm.

Spread of the cooked onion and grape mixture on the bottom of the roasting pan and place the chicken on top, including the leftover juices in the pan. Top with remaining grape and onion mixture and sprinkle chopped rosemary over, for garnishing.

Rosemary Roasted Grapes are absolutely divine over creamy Brie cheese and a piece of sliced toasted French baguette forhors d'oeuvres. In would even be amazing atop sharp goat cheese or gorgonzola! The sweet grapes become a little more intense after being roasted, with the earthy and aromatic rosemary a nice surprise in the background.

Heat oil in an oven-proof skillet over medium high heat. Add smashed garlic clove and swirl, to season the oil. Season the skin side of the chicken generously, with salt and pepper, and place skin side down in hotskillet. Season the other side of chicken with salt andpepper, and remove the garlic. Sear skin side until golden and crispy, 6-7 minutes, turning heat to medium. Flip. Place the shallots between the chicken and drizzle with the vinegar. Top with the grape clusters, nestling between and around the chicken. Sprinkle with rosemary and place in the oven for 20 minutes or until internal temp reaches 170F.

Rosemary is one of my favorite herbs for fall, its sharp green scent gives me life when the temperatures drop and I start to roast more and grill less. Figuring that it was a good balance for the extreme sweetness of the grapes, I chopped up a large sprig of rosemary and tossed it with the grapes and some salt, pepper and olive oil before roasting them in the 400 degree oven.

The next day, on glorious Monday, when everyone was back at school and I was working at home, I tossed a few of the leftover grapes into a salad for lunch with leftover roasted sweet potato, arugula, radicchio, shaved carrot, red onion, feta cheese, balsamic vinegar and olive oil.
