For the mushrooms, preheat grill to medium high. Saut pancetta until just brown and fat has been rendered. Add maitake to the pan and caramelize. Add white wine and thyme and reduce until pan is nearly dry; hold warm.
Add the garlic, paprika and chilli powder and cook for a few seconds, stirring. Tip the tomatoes and beans into the pan, and stir in the tomato pure and mustard. Pour over the stock and bring to a gentle simmer.

1. Preheat the oven to 190C, gas mark 5. Rub the pork with 1 tsp oil and sear all over in a hot frying pan until brown. Place on a foil-lined baking tray and sprinkle with the grated zest of 1 lemon, mixed herbs and seasoning. Roast for 25-30 minutes or until cooked through. Remove to rest, then slice into 1cm-thick rounds.
2. Heat 2 tsp oil in a pan and add two-thirds of the garlic and rosemary, cook over a low heat for 5 minutes. Add the beans and cook for 5 minutes. Mash with the zest and juice of lemon, mustard and stock until smooth, then season to taste.
3. Heat 1 tsp oil in a pan and fry the remaining garlic and kale for 4-5 minutes until wilted. Serve the bean mash topped with pork slices and kale. Add a pinch of chilli flakes, then drizzle with olive oil and serve with lemon wedges, if desired.
The pork loin is perfectly tender, moist, and full of rosemary and thyme, and the greens are as silky as can be, but even so, the humble white beans kind of steal the show. While beans simmer, preheat oven to 475F with rack in upper third. Toss tomatoes with oil and spread out, cut sides up, in a large 4-sided sheet pan. White beans Part of the kidney bean family, white beans can include haricot, cannellini, lima and butter beans. They need to be soaked prior to cooking and are a great all-purpose bean, perfectly at home in braises as they are in salads, soups and pures. White beans are smaller than cannellini beans, which are longer and kidney-shaped. Cannellini cook to a fluffy texture and are especially popular in Tuscany where the people are known as 'mangia fagioli', or bean eaters, due to the large amounts of beans they consume. Haricot or navy beans make excellent baked beans - most notably as part of the classic French cassoulet.
