No Bake Vegan Pecan Pie Bars Gluten Free  That Vegan Babe

Learn how to make gluten-free vegan Pecan Sandies. This is the plant-based version of the shortbread cookies you had growing up. Pecans are the star ingredient! These make a great treat to add to your holiday dessert platter.

Why are these cookies called sandies?

Glutenfri?  All of the ingredients for this recipe are naturally gluten-free.  However, if you have a severe sensitivity, be sure to purchase Certified Gluten-Free nuts, dates, and brown rice flour.  Sometimes these items are produced in facilities along with wheat, which can cause cross-contamination.

Theyre a sweet, crunchy wonderful snack any time of the day or night. These particular cookies are not particularly difficult to make either. If you have a sweet tooth, youll love em.

Just a note about substituting flours: I have tested this recipe with White Whole Wheat flour successfully.All-Purpose flour definitely yields softer and less dense bars, but the Whole Wheat flour added a subtle nuttiness and made them more filling.If I were making them just for myself I would use either flour, but for company I would recommend using All-Purpose.

I have always found it rather difficult to be a recipient. Although ours is a culture that emphasizes getting over giving, it is also one that seems to imply that getting by any means other than one's own resources is a sign of weakness. Let me tell you, Jimmy John's "free smells" have got nothing on our deli treats that come out of the oven daily. Maple pecan scones, coconut oatmeal cookies and lemon cookies to name a few, their heavenly aroma filling the air. If I inhale slowly through my nose and take in the scent, I am immediately brought to my happy place. Even if I am having a bad day, and nothing is going right,
